Admin Center, under the email channel settings. There is an HTML template and a plain text one, and both are sent with every message. The recipient's mail client chooses which to show.
What to change and what not to
The template is the frame: logo, colours, footer, whether the conversation history appears. Anything that varies by situation belongs in the trigger that sends the message, so a change affects one message rather than all of them.
Keep a copy first
There is no version history and no undo. Paste the current template into a document before editing. It takes ten seconds and it is the difference between reverting and rebuilding.
Test in real clients
What looks right in a browser preview does not always survive Outlook. Send to a desktop client, a webmail account and a phone before you consider it done.
