Yes, and it is worth doing. The apps you try are also the ones you should decide about before the trial ends.
What is possible
Apps can be installed during a trial, so you can evaluate the integrations your setup will actually depend on rather than only the core product.
Try the ones you will rely on
If your plan involves a CRM connection or a Jira link, test it during the trial. Discovering afterwards that the integration does not carry a field you need is an expensive surprise.
Watch for separate charges
A paid app has its own trial and its own billing, run by the developer rather than by Zendesk. Those two periods do not align, and the app's charge can start while you are still deciding about the platform.
Note both dates.
What happens at the end
Apps generally remain installed when a trial converts. If you do not convert, cancel any app subscriptions separately, because uninstalling does not end them.
Do not install everything
Trials invite exploration, and every app installed is a decision deferred. Three apps evaluated properly tells you more than twelve installed and forgotten.
Decide before the trial ends
For each app: keep, remove, or undecided. Undecided means it stays, quietly, for two years, still holding access to your tickets.
